Loaded Smashed Potatoes

Lately I have had a thing for potatoes.  Maybe it's because it is becoming fall or maybe it's because they are delicious.  I decided to try out a bunch of potato recipes that I found on Pinterest.  To keep track of all of these recipes I created a yummy Potato recipe board - Hot Potato!

I have seen several recipes for smashed potatoes - I didn't follow any one recipe directly - I got ideas from several and than put a bit of a twist on it and made it my own - I made my  smashed potatoes LOADED!  Yum!!!



Loaded Smashed Potatoes

Ingredients:
Small Potatoes (I like red potatoes)
1/4 cup Olive Oil
2 Garlic Cloves
Salt & Pepper
Whatever you like to load up your potatoes with.  For me it is Green Onions, Bacon and Cheese

Start off by washing your potatoes and then boiling them in salted water until fork tender (about 12-15 minutes)



While your potatoes are boiling saute the garlic cloves in the olive oil over medium heat until the garlic cloves are a golden brown.  Take out the garlic cloves and now you have a nice garlic oil for your potatoes.


When the potatoes are done boiling (you can poke a fork in easily but they aren't falling apart) dry them off and put them on a parchment covered baking sheet (I actually have parchment paper and tinfoil - and honestly I am not sure why) :)

Then turn your masher and mash the opposite direction

My potatoes definatley didn't turn out as nice or as pretty as all of the recipes I looked at.  Maybe my potatoes weren't cooked enough to begin with, but I kept at it and the end result was tasty!  Mashing these potatoes was easier said than done.

But some of them turned out all right

Now drizzle on some of your garlic oil, sprinkle with salt and pepper and pop into a preheated 450 degree oven.  Cook for 15-20 minutes.

They come out of the oven all yummy and crispy

You can eat them like this and to be honest you likely will eat several like this to taste how yummy they are.  But to kick it up a notch Load on some green onions, bacon bits and cheese.

Than throw back into the oven until the cheese is melted (about 5 minutes).

These are great for a snack or with dinner, enjoy!!!!
